Portuguese Malasadas (Malassadas)

Portuguese Malasadas, also known as Malassadas, are a cherished dessert often enjoyed during celebrations like Mardi Gras. These airy and tender deep-fried doughnuts are generously coated in sugar, offering a delightful contrast between a sweet, crispy outer layer and a soft, pillowy inside. The dough, enriched with eggs, butter, and a hint of citrus zest, provides a burst of flavor in each bite. Whether savored fresh from the fryer or at room temperature, these delicious treats bring the essence of Portugal to your table.

Ingredients

  • 1 cup warm water
  • 2 tsp active dry yeast
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup butter, melted
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 3 1/2 cups all-purpose flour
  • as needed vegetable oil for frying
  • 1 cup granulated sugar, for coating

Instructions

  1. Combine warm water and yeast in a small bowl. Let it sit for 5 minutes until foamy.
  2. In a large bowl, whisk together granulated sugar, eggs, melted butter, vanilla extract, and salt.
  3. Stir the yeast mixture into the egg mixture until combined.
  4. Gradually add the flour, mixing until a sticky dough forms.
  5. Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for 1 to 2 hours, or until doubled in size.
  6. Punch down the dough and divide it into small balls, about the size of a golf ball.
  7. Heat vegetable oil in a deep skillet to 350°F (180°C).
  8. Carefully place dough balls into the hot oil, frying until golden brown on all sides, about 2 to 3 minutes per side.
  9. Drain the malasadas on paper towels, then immediately roll them in granulated sugar while still warm.
  10. Allow to cool slightly before serving.
