Ingredients
- 1 cup red lentils
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp coriander
- 1/2 tsp turmeric
- 1 can coconut milk
- 4 cups vegetable broth
- 3 cups kale, chopped
- 1 tbsp lime juice
- Salt and pepper to taste
Instructions
- Rinse the red lentils under cold water until the water runs clear. Set aside.
- In a large stock pot, heat olive oil over medium heat. Add diced onion and cook until translucent, about 5 minutes.
- Add minced garlic, cumin, coriander, and turmeric to the pot. Stir and cook for another minute until fragrant.
