Ingredients

  • 2 lb live lobsters
  • 1/2 cup sake
  • 1/4 cup soy sauce
  • 2 Tbsp fresh ginger, thinly sliced
  • 2 cloves garlic, minced
  • 1 Tbsp vegetable oil

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add live lobsters and cook for 8 minutes until bright red. Remove from pot and let cool slightly.
  3. In a separate pot over medium heat, heat vegetable oil. Add ginger and garlic, sauté for 1 minute until fragrant.
  4. Pour in sake and soy sauce, then bring mixture to a simmer.
  5. Place the lobsters in the simmering broth, cover, and cook for another 5 minutes.
  6. Remove lobsters from the broth and let them cool enough to handle.
  7. Using kitchen shears, cut the lobsters in half lengthwise and remove the meat.
  8. Strain the broth, then serve the lobster meat with the broth as a dipping sauce.
