Ingredients

  • 1 cup white rice
  • 1/2 lb small shrimp, peeled and deveined

  • 2 cloves garlic, minced

  • 4 cups fish or vegetable broth
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 Tbsp olive oil

Instructions

  2. Add the chopped onion and minced garlic; sauté until translucent, about 3 minutes.
  3. Stir in the white rice and cook until lightly toasted, around 2 minutes.
  4. Add small shrimp, diced tomato, paprika, salt, and black pepper, stirring to combine.
  5. Pour in 4 cups of fish or vegetable broth; bring mixture to a boil.
  6. Reduce heat to low, cover, and simmer for 20 minutes or until rice is cooked and liquid is absorbed.
  7. Remove from heat and let stand covered for 5 minutes before fluffing with a fork.
