Ingredients

  • 1 lb saltfish, soaked and flaked
  • 1 whole callaloo leaves, chopped

  • 1 whole scotch bonnet pepper, minced
  • 1 tsp thyme, dried
  • 1 tsp black pepper, ground
  • 1 tbsp vegetable oil

Instructions

  1. Soak the saltfish in water for at least 4 hours, changing the water several times to remove excess salt.
  2. After soaking, flake the saltfish into small pieces and set aside.
  3. In a large skillet, heat the vegetable oil over medium heat.
  4. Add the onion, garlic, and scotch bonnet pepper, and sauté until fragrant, about 2 to 3 minutes.
  5. Stir in the tomatoes, thyme, and black pepper, and cook until the tomatoes are softened, about 5 minutes.
  6. Add the callaloo leaves and saltfish to the skillet and cook until the callaloo is wilted and the saltfish is heated through, about 5 to 7 minutes.
  7. Adjust seasoning with additional salt, if needed, and serve the dish hot.
