  2. Shape the mixture into small balls, approximately 1 inch in diameter, and place them on a lined baking sheet.
  3. In a skillet, heat the olive oil over medium heat until shimmering.
  4. Carefully place the sardine balls in the skillet and fry them, turning occasionally with a spatula, until they are golden brown on all sides, about 3 to 4 minutes per side.
  5. Transfer the fried sardine balls to a paper towel-lined plate to drain excess oil.
