Ingredients

  • 1 pound boneless skinless chicken breasts, sliced into strips
  • 1 tablespoon olive oil
  • 1 packet fajita seasoning
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 8 ounces tortilla chips
  • 2 roma tomatoes, diced
  • 1 jalapeño, sliced
  • 1 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the chicken strips, olive oil, and fajita seasoning. Mix well to ensure the chicken is evenly coated.
  3. Spread the seasoned chicken, bell peppers, and onion onto a large sheet pan.
  4. Bake in the preheated oven for 15 minutes, or until the chicken is cooked through and the vegetables are tender.
