Ingredients
- 4 salmon fillets
- 2 tablespoons honey
- 2 tablespoons Dijon mustard
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound baby potatoes, halved
- 2 cups broccoli florets
- 1 cup cherry tomatoes
Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, whisk together honey, Dijon mustard, olive oil, lemon juice, salt, and pepper.
- Place salmon fillets on one side of a large sheetpan and brush with the honey-Dijon mixture.
- On the other side of the sheetpan, arrange the baby potatoes cut-side down.
- Bake for 10 minutes.
- Add broccoli florets and cherry tomatoes to the sheetpan, drizzle with olive oil, and toss to coat.
- Return to oven and bake for an additional 15-20 minutes, or until salmon is cooked through and vegetables are tender.
- Serve immediately, garnished with additional lemon wedges if desired.
