  • 4 Tbsp olive oil
  • 1 package phyllo dough, thawed
  • 1/2 cup butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the chopped spinach, crumbled feta, finely chopped onion, minced garlic, fresh dill, fresh parsley, and olive oil until well combined.
  3. Brush a 9×13 inch baking dish with melted butter to prevent sticking.
  4. Lay a sheet of phyllo dough in the dish and brush it generously with melted butter. Repeat this process with 7 more sheets, brushing each layer with butter.
  5. Evenly spoon the spinach mixture over the layered phyllo sheets.
  6. Place 8 more sheets of phyllo on top of the spinach mixture, brushing each one with melted butter.
  7. Using a sharp knife, score the top layers into squares or triangles, ensuring not to cut all the way through.
  8. Bake the dish in the preheated oven for 45 minutes or until the top is golden and crispy.
  9. Remove from the oven and let the Spanakopita cool slightly before serving.
