Juicy chicken breasts filled with a creamy spinach and ricotta mixture are an elegant yet simple dinner option.

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup ricotta cheese
  • 2 cups fresh spinach, chopped
  • 1/2 cup grated parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, combine ricotta, spinach, parmesan, egg, garlic, oregano, salt, and pepper to create the stuffing.
  3. Cut a slit in each chicken breast to form a pocket for the stuffing.
  4. Divide the spinach and ricotta mixture evenly, filling each chicken breast.
  5. Secure the chicken breasts with toothpicks to keep the stuffing inside.
  6. Heat olive oil in a large oven-safe skillet over medium-high heat.
  7. Sear chicken breasts for 3-4 minutes per side until golden brown.
  8. Transfer skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through.
  9. Remove toothpicks and let rest for a few minutes before serving.
