A delightful combination of spicy and sweet, this sriracha honey glazed salmon pairs beautifully with a nutty quinoa pilaf.

Ingredients

  • 4 salmon fillets, skinless
  • 1/4 cup sriracha sauce
  • 1/4 cup honey
  • 1 tablespoon soy sauce
  • 2 cups cooked quinoa
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon olive oil
  • 1 lemon, juiced
  • to taste salt and pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together sriracha sauce, honey, and soy sauce until smooth.
  3. Place salmon fillets on a lined baking sheet and brush them generously with the sriracha honey glaze.
  4. Bake the salmon in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
  5. While the salmon is baking, prepare the quinoa pilaf by heating olive oil in a pan over medium heat.
  6. Add cooked quinoa to the pan along with chopped parsley and a squeeze of lemon juice.
  7. Season the quinoa with salt and pepper to taste, stirring occasionally, until heated through.
  8. Serve the salmon fillets on a bed of quinoa pilaf, garnishing with extra parsley if desired.
