Ingredients
- 8 large Swiss chard leaves
- 1 cup long-grain rice, rinsed and drained
- 1/2 cup olive oil

- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup lemon juice
- 2 cups vegetable broth
Instructions
- Preheat the oven to 375°F (190°C).
- Bring a large pot of salted water to a boil. Blanch the Swiss chard leaves for 2 minutes, then transfer them to a bowl of ice water to cool. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and cook until softened, about 5 minutes.
- Add the rice, ground cumin, ground coriander, parsley, mint, and lemon juice to the skillet. Stir to combine and cook for 2 minutes.
- Pour in the vegetable broth and bring to a simmer. Cook for about 10 minutes or until the liquid is absorbed and the rice is cooked through.
- Place a spoonful of the rice mixture onto each Swiss chard leaf. Roll them up, tucking in the sides securely to hold the filling.
- Arrange the stuffed chard leaves in a baking dish. Cover with foil and bake for 20-25 minutes.
- Remove from the oven and allow to cool slightly before serving.
