Ingredients

  • 8 large Swiss chard leaves
  • 1 cup long-grain rice, rinsed and drained
  • 1/2 cup olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup lemon juice
  • 2 cups vegetable broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Bring a large pot of salted water to a boil. Blanch the Swiss chard leaves for 2 minutes, then transfer them to a bowl of ice water to cool. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and cook until softened, about 5 minutes.
  4. Add the rice, ground cumin, ground coriander, parsley, mint, and lemon juice to the skillet. Stir to combine and cook for 2 minutes.
  5. Pour in the vegetable broth and bring to a simmer. Cook for about 10 minutes or until the liquid is absorbed and the rice is cooked through.
  6. Place a spoonful of the rice mixture onto each Swiss chard leaf. Roll them up, tucking in the sides securely to hold the filling.
  7. Arrange the stuffed chard leaves in a baking dish. Cover with foil and bake for 20-25 minutes.
  8. Remove from the oven and allow to cool slightly before serving.
