Ingredients

  • 1 cup bulgur wheat
  • 2 cups fresh parsley, finely chopped

  • 1 cup english cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/3 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. In a bowl, combine bulgur wheat with 2 cups of boiling water. Cover and let sit for 20 minutes to soften the grains.
  2. Fluff the bulgur with a fork and let it cool to room temperature.
  3. In a large bowl, combine the parsley, mint, tomatoes, cucumber, and red onion.
  4. Add the cooled bulgur to the bowl and mix well to evenly distribute the ingredients.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper until well combined.
  6. Pour the dressing over the salad and toss thoroughly to coat all ingredients.
