Ingredients
- 1 lb italian sausage, casings removed
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 3 potatoes, diced
- 1 bunch kale, stems removed and leaves chopped
- 1 cup heavy cream
- 1/2 tsp red pepper flakes
Instructions
- In a large pot, cook the Italian sausage over medium heat until browned, breaking it into small pieces as it cooks.
- Add the diced onion and minced garlic to the pot, stirring occasionally until the onion is translucent and the garlic is fragrant, about 2 to 3 minutes.
- Pour in the chicken broth and bring it to a boil. Add the diced potatoes, then reduce the heat and let it simmer for about 15 minutes, or until the potatoes are tender.
- Stir in the chopped kale and cook for another 5 minutes, or until the kale is wilted and tender.
- Lower the heat and stir in the heavy cream and red pepper flakes. Let the soup heat through without boiling and adjust seasoning as needed.
- Serve immediately, piping hot in individual bowls.
