Ingredients
- 1 cup green or brown lentils, rinsed
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups diced tomatoes
- 1 tablespoon fresh sage, chopped
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon lemon juice
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic, sauté until the onion is translucent, about 5 minutes.
- Stir in the rinsed lentils, vegetable broth, diced tomatoes, chopped sage, dried thyme, salt, and black pepper.
- Bring the mixture to a boil, then reduce heat to low and simmer uncovered for 40 minutes, or until lentils are tender.
- Stir in the lemon juice, and adjust seasoning if necessary.
- Serve hot, garnished with additional fresh sage if desired.
