Ingredients

  • 1 cup green or brown lentils, rinsed
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups diced tomatoes
  • 1 tablespoon fresh sage, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, sauté until the onion is translucent, about 5 minutes.
  3. Stir in the rinsed lentils, vegetable broth, diced tomatoes, chopped sage, dried thyme, salt, and black pepper.
  4. Bring the mixture to a boil, then reduce heat to low and simmer uncovered for 40 minutes, or until lentils are tender.
  5. Stir in the lemon juice, and adjust seasoning if necessary.
  6. Serve hot, garnished with additional fresh sage if desired.
