Ingredients

  • 2 cups tomatoes, chopped
  • 1 cup zucchini, sliced
  • 1 cup bell peppers, sliced

  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 cup olive oil
  • salt and pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the tomatoes, zucchini, bell peppers, onions, garlic, oregano, thyme, olive oil, and a pinch of salt and pepper. Mix well to coat all the vegetables evenly with the oil and spices.
  3. Transfer the vegetable mixture to a casserole dish, spreading it out evenly.
  4. Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes.
  5. Remove the foil and bake for an additional 15 minutes, or until the vegetables are tender and the top is slightly browned.
  6. Serve hot, optionally garnishing with fresh herbs.
