  • 8 whole rice paper wrappers

  • 1/2 head red cabbage, thinly sliced
  • 1 whole avocado, sliced
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup peanuts, crushed
  • 1 cup creamy peanut butter
  • 2 Tbsp soy sauce
  • 2 Tbsp lime juice
  • 1 Tbsp brown sugar
  • 1 Tbsp sriracha sauce

Instructions

  1. Prepare all the vegetables by julienning or slicing them thinly.
  2. Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for a few seconds until soft and pliable.
  3. Lay the wrapper flat on a clean surface. Arrange a small handful of each vegetable, some herbs, and a sprinkle of crushed peanuts in the center of the wrapper.
  4. Fold the sides of the wrapper over the filling, then roll tightly to enclose the ingredients securely.
  5. Repeat with the remaining wrappers and filling.
  6. In a small bowl, whisk together peanut butter, soy sauce, lime juice, brown sugar, and sriracha to make the dipping sauce.
