Ingredients

  • 2 whole onions, chopped
  • 3 medium carrots, sliced
  • 1 whole eggplant, cubed
  • 1 15 oz can chickpeas, drained and rinsed
  • 2 cups vegetable broth
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground turmeric
  • 1/4 tsp cayenne pepper
  • 1/4 cup raisins
  • 2 Tbsp olive oil

Instructions

  1. Heat the olive oil in a tagine pot or large skillet over medium heat. Add the chopped onions and cook until they are soft, about 5 minutes.
  2. Stir in the sliced carrots and cubed eggplant, cooking for an additional 5 minutes.
  3. Add the drained chickpeas, vegetable broth, ground cumin, ground cinnamon, ground turmeric, cayenne pepper, and raisins. Stir well to combine all ingredients.
  4. Cover the pot and reduce the heat to low. Let the mixture simmer for 45-50 minutes, or until the vegetables are tender.
  5. Taste and adjust the seasoning with salt and pepper as needed before serving.
