Ingredients
- 1 1/2 cups graham cracker crumbs, lower case
- 1/3 cup sugar
- 1/2 cup butter, melted
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 2 tsp vanilla extract
- 2 large eggs
- 1/2 cup blueberries
- 1 tbsp lemon zest
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, combine graham cracker crumbs, 1/3 cup sugar, and melted butter until the mixture is uniform. Firmly press this mixture into the bottom of a greased 9×9 inch baking pan to form the crust.
- In a large mixing bowl, blend the cream cheese, 1/2 cup sugar, and vanilla extract until smooth. Integrate eggs one at a time, ensuring each is fully incorporated before adding the next.
- Gently pour the cream cheese mixture over the prepared crust. Evenly distribute the blueberries and sprinkle the lemon zest across the top of the cream cheese layer.
- Bake in the preheated oven for 40-45 minutes, or until the center of the cheesecake is set but slightly wobbly. Remove from the oven and allow to cool at room temperature. Chill in the refrigerator for at least 3 hours to firm up before slicing into bars.
