Ingredients

  • 1 1/2 pounds rainbow carrots, peeled and trimmed
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt

  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 2 tablespoons water
  • 1 tablespoon sesame seeds, toasted

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and trim the carrots, then cut them in half lengthwise.
  3. Place the carrots on a baking sheet, drizzle with olive oil, and season with salt and pepper. Toss to coat evenly.
  4. Roast the carrots in the preheated oven for 25–30 minutes, turning halfway through, until they are tender and caramelized.
  5. While the carrots are roasting, prepare the tahini drizzle by whisking together tahini, lemon juice, honey, and water until smooth.
  6. Once the carrots are roasted, arrange them on a serving platter.
  7. Drizzle the tahini sauce over the carrots, then sprinkle with toasted sesame seeds.
