Ingredients

  • 4 medium zucchinis
  • 1/2 cup pesto sauce
  • 1/4 cup sun-dried tomatoes, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Using a spiralizer, create noodles from the zucchinis and set aside.
  2. In a large skillet over medium heat, warm the olive oil and sauté the minced garlic for 1 minute until fragrant.
  3. Add the zucchini noodles to the skillet and cook for 3-4 minutes, stirring occasionally, until slightly tender.
  4. Reduce the heat to low and stir in the pesto sauce, ensuring all the noodles are coated evenly.
  5. Add the sun-dried tomatoes and continue to stir for another 2 minutes.
  6. Remove from heat and season with salt and pepper to taste.
  7. Sprinkle grated Parmesan cheese on top before serving.
