Ingredients

  • 12 whole corn tortillas, pressed into cup shapes
  • 2 cups shredded cooked chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced green chilies
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sour cream

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a muffin tin.
  2. In a large mixing bowl, combine the shredded chicken, enchilada sauce, cheddar cheese, and green chilies. Mix thoroughly to ensure even distribution of ingredients.
  3. Press each corn tortilla into a muffin cup to form a cup shape, making sure the edges are slightly raised to hold the fillings.
  4. Evenly distribute the chicken mixture among the tortilla cups.
  5. Add a spoonful of sour cream to the top of each filled cup.
  6. Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tortillas have turned golden and crispy and the cheese is melted and bubbly.
  7. Remove from oven and let cool for a few minutes. Garnish each enchilada cup with fresh cilantro and a light drizzle of additional enchilada sauce before serving.
