Gruyère and Ham Croquettes

Ingredients

  • 1 1/2 cups cooked ham, finely chopped
  • 1 cup Gruyère cheese, shredded
  • 1/4 cup all-purpose flour
  • 1/4 cup butter
  • 1 cup milk
  • 1/4 teaspoon nutmeg, ground
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper, ground
  • 2 cups bread crumbs
  • 2 quarts vegetable oil, for frying

Instructions

  1. Melt the butter in a saucepan over medium heat. Once melted, stir in the flour and cook for 2 minutes, constantly stirring to create a smooth roux.
  2. Slowly add the milk to the roux, whisking continuously until the sauce thickens.
  3. Add the chopped ham, shredded Gruyère cheese, ground nutmeg, salt, and black pepper to the thickened sauce. Stir well until the cheese has melted and the ingredients are well combined.
  4. Pour the mixture into a baking dish. Let it cool slightly before refrigerating for 1 hour to firm up.
  5. Once chilled, shape the mixture into small, oval croquettes. Roll each croquette in bread crumbs to coat thoroughly.
  6. Heat the vegetable oil in a deep skillet to 350°F (175°C). Fry the croquettes in batches, being careful not to overcrowd the skillet, until they are golden brown and crispy on all sides.
  7. Remove the croquettes from the oil using a slotted spoon and let them drain on a paper towel-lined plate.
