Beef Soup (Rawon) is a traditional Indonesian dish celebrated for its rich, aromatic broth. Ingredients
- 2 lbs beef shank, cut into chunks
- 8 cups water
- 1 stalk lemongrass, smashed
- 4 cloves garlic, minced
- 2 inch galangal, sliced
- 1 inch ginger, sliced
- 4 Tbsp ketumbar (coriander) powder
- 2 tsp salt
- 1/2 cup kluwek (keluak) nuts, mashed
- 1 cup bean sprouts
- sliced green onions and fried shallots for garnish
Instructions
- In a large pot, combine 8 cups of water, the smashed lemongrass, minced garlic, sliced galangal, sliced ginger, coriander powder, and salt. Bring to a boil over medium heat.
- Once boiling, add the beef shank chunks. Reduce the heat to low and let the soup simmer for about 2 hours, or until the beef is tender.
- After 2 hours, stir in the mashed kluwek nuts and continue simmering for an additional 30 minutes.
- Before serving, remove the lemongrass stalk and ginger slices from the soup.
- Serve the beef soup hot, garnished with bean sprouts, sliced green onions, and fried shallots. It’s traditionally enjoyed with steamed rice.
- Optionally, pair with sambal for added heat.
