Ingredients

  • 1 lb beef chuck, cubed

  • 1 can diced tomatoes

  • 1 tsp paprika
  • 1 tsp cumin
  • 4 cups beef broth

Instructions

  1. Heat 2 Tbsp of olive oil in a large pot over medium heat.
  2. Add the cubed beef chuck and brown on all sides, about 5 minutes.
  3. Add the chopped onion and minced garlic; sauté until fragrant, about 3 minutes.
  4. Stir in the rice, paprika, and cumin. Cook for 2 minutes, stirring constantly to toast the rice lightly.
  5. Pour in the can of diced tomatoes and the beef broth. Stir well and bring the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.
  7. Check the seasoning and add salt and pepper as needed.
  8. Serve immediately and garnish with fresh herbs if desired.
