Ingredients

  • 1 pound white fish fillets, cut into chunks
  • 1 tablespoon lime juice
  • 1 teaspoon salt
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 large onion, sliced
  • 1 large bell pepper, sliced
  • 2 tomatoes, chopped
  • 1 cup coconut milk
  • 1/2 teaspoon black pepper
  • 1 tablespoon cilantro, chopped

Instructions

  1. In a bowl, marinate the fish chunks with lime juice, salt, and minced garlic for about 15 minutes.
  2. Heat the olive oil in a 9-inch skillet over medium heat. Add the sliced onions and bell peppers, sauté until softened, about 5 minutes.
  3. Add the chopped tomatoes to the skillet and cook for another 5 minutes until they start to break down.
  4. Pour in the coconut milk and bring the mixture to a simmer.
  5. Add the marinated fish into the skillet and sprinkle with black pepper. Simmer on low heat for 10 minutes until the fish is cooked through and flaky.
  6. Remove from heat, garnish with chopped cilantro, and serve hot.
