Ingredients

  • 4 large russet potatoes
  • 2 cups broccoli florets, chopped
  • 1 cup cheddar cheese, shredded
  • 1/2 cup sour cream
  • 2 tablespoons butter
  • 1/4 cup fresh chives, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pierce each potato several times with a fork, then place them directly on the oven rack. Bake for about 1 hour or until thoroughly cooked and tender.
  3. While the potatoes are baking, steam the broccoli florets until they're tender, about 5-7 minutes.
  4. Once the potatoes are done, remove them from the oven and let them cool enough to handle. Cut each potato in half lengthwise and scoop out the flesh, leaving a thin shell.
  5. In a bowl, combine the potato flesh, steamed broccoli, shredded cheddar cheese, sour cream, butter, and salt and pepper to taste. Mix until well combined and creamy.
  6. Spoon the broccoli and cheddar mixture back into the potato shells.
  7. Place the stuffed potatoes on a baking sheet and return to the oven for an additional 15 minutes until the tops are slightly golden and the cheese is melted.
  8. Garnish with chopped fresh chives before serving.
