Ingredients
- 4 large russet potatoes
- 2 cups broccoli florets, chopped
- 1 cup cheddar cheese, shredded
- 1/2 cup sour cream
- 2 tablespoons butter
- 1/4 cup fresh chives, chopped

Instructions
- Preheat the oven to 400°F (200°C).
- Pierce each potato several times with a fork, then place them directly on the oven rack. Bake for about 1 hour or until thoroughly cooked and tender.
- While the potatoes are baking, steam the broccoli florets until they're tender, about 5-7 minutes.
- Once the potatoes are done, remove them from the oven and let them cool enough to handle. Cut each potato in half lengthwise and scoop out the flesh, leaving a thin shell.
- In a bowl, combine the potato flesh, steamed broccoli, shredded cheddar cheese, sour cream, butter, and salt and pepper to taste. Mix until well combined and creamy.
- Spoon the broccoli and cheddar mixture back into the potato shells.
- Place the stuffed potatoes on a baking sheet and return to the oven for an additional 15 minutes until the tops are slightly golden and the cheese is melted.
- Garnish with chopped fresh chives before serving.
