Instructions

  1. Preheat the skillet over medium heat and add olive oil.
  2. Once hot, add the chopped onion and sauté until translucent, about 2 to 3 minutes.
  3. Incorporate the minced garlic, ground cumin, paprika, and chili powder, cooking for another minute until fragrant.
  4. Add the crushed tomatoes and let the mixture simmer for about 10 minutes, stirring occasionally.
  5. Gently make four wells in the tomato mixture and carefully crack an egg into each well.
  6. Cover the skillet and let cook for about 6 to 8 minutes, or until the egg whites have set but the yolks remain runny.
  7. Remove from heat and season with salt and pepper. Sprinkle with fresh chopped parsley before serving.
