Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a 9×9-inch baking pan with parchment paper, allowing the paper to overhang for easier removal of the bars after baking.
  3. In a large mixing bowl, whisk together the flour, 1/2 cup sugar, and salt.
  4. Add the cold, cubed butter and vanilla extract to the bowl. Using a pastry cutter or two forks, blend the ingredients until the mixture resembles coarse crumbs.
  5. Firmly press half of the crumb mixture into the bottom of the lined pan to create an even crust.
  6. In a separate bowl, toss the mixed berries with 1/4 cup sugar and the cornstarch until the berries are well-coated.
  7. Evenly distribute the berry mixture over the crust in the pan.
  8. Sprinkle the remaining crumb mixture over the berries to form the topping.
  9. Bake in the preheated oven for 45 minutes, or until the topping is golden brown and the berry filling is bubbly.
  10. Remove the pan from the oven and allow to cool completely on a wire rack. After cooling, use the overhangs of parchment paper to lift the bars out of the pan. Cut into even bars before serving.
