Savory and aromatic, this cauliflower fried rice with tofu and ginger is a satisfying low-carb alternative to traditional fried rice.
Ingredients
- 1 head cauliflower, grated
- 1 block firm tofu, cubed
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1 tablespoon ginger, minced
- 2 cloves garlic, minced
- 1 bunch green onions, chopped
- 1 cup frozen peas and carrots
- 1/4 teaspoon black pepper
Instructions
- Grate the cauliflower head to create rice-like grains.
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
- Add the cubed tofu and cook until golden and crispy on all sides, about 5 minutes. Remove from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Saute the ginger and garlic until fragrant, about 1 minute.
- Add the grated cauliflower, soy sauce, and black pepper. Stir and cook for about 3 minutes until the cauliflower is tender.
- Stir in the frozen peas and carrots, cooking for an additional 2 minutes.
- Finally, add the crispy tofu and chopped green onions, mixing well to combine.
- Serve hot, garnished with extra green onions if desired.
