Savory and aromatic, this cauliflower fried rice with tofu and ginger is a satisfying low-carb alternative to traditional fried rice.

Ingredients

  • 1 head cauliflower, grated
  • 1 block firm tofu, cubed
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • 1 bunch green onions, chopped
  • 1 cup frozen peas and carrots
  • 1/4 teaspoon black pepper

Instructions

  1. Grate the cauliflower head to create rice-like grains.
  2. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
  3. Add the cubed tofu and cook until golden and crispy on all sides, about 5 minutes. Remove from the skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of vegetable oil. Saute the ginger and garlic until fragrant, about 1 minute.
  5. Add the grated cauliflower, soy sauce, and black pepper. Stir and cook for about 3 minutes until the cauliflower is tender.
  6. Stir in the frozen peas and carrots, cooking for an additional 2 minutes.
  7. Finally, add the crispy tofu and chopped green onions, mixing well to combine.
  8. Serve hot, garnished with extra green onions if desired.
