This cherry almond coffee cake boasts a moist, nutty base with bursts of cherries, finished with a sweet vanilla glaze.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 large eggs
- 3/4 cup sour cream
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen pitted cherries
- 1/2 cup sliced almonds
- 1/2 cup powdered sugar
- 1 tablespoon milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour an 8-inch square baking pan.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together all-purpose flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the creamed mixture alternately with sour cream, beginning and ending with the dry ingredients.
- Gently fold in the cherries and sliced almonds.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 30 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake cools slightly, prepare the glaze by mixing the powdered sugar, milk, and vanilla extract until smooth.
- Drizzle the vanilla glaze over the warm cake. Allow the cake to cool before slicing.
- Serve slices of the cake and enjoy the blend of cherry and almond flavors.
