Ingredients

  • 2 lbs chicken thighs, bone-in, skin-on
  • 1 cup green olives, pitted
  • 1 whole onion, chopped

  • 1 tsp ground cumin
  • 1 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground turmeric
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 cups chicken broth
  • 2 Tbsp olive oil

Instructions

  1. Heat olive oil in a large Dutch oven over medium heat.
  2. Season chicken thighs with salt and pepper, then brown them in the pot for about 4 minutes on each side.
  3. Remove the chicken from the pot and set aside.
  4. Add chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.
  5. Stir in ground cumin, ground ginger, ground cinnamon, and ground turmeric, then cook until fragrant, about 1 minute.
  6. Return the browned chicken to the pot and add green olives, chopped cilantro, chopped parsley, and chicken broth.
  7. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 45 minutes, allowing the flavors to meld.
  8. Serve in a warm dish, optionally garnished with additional herbs.
