Ingredients

  • 1 pound chicken thighs, boneless and skinless, cut into bite-sized pieces

  • 5 dried bird’s eye chilies, finely chopped
  • 2 stalks lemongrass, white part only, finely chopped
  • 1 tsp sugar
  • 1 tsp salt
  • 1/2 cup water

Instructions

  1. Marinate the chicken pieces in soy sauce and lime juice for 30 minutes.
  2. Heat 2 Tbsp of oil in a pan over medium heat and sauté garlic, ginger, bird’s eye chilies, and lemongrass until fragrant, about 2-3 minutes.
  3. Add the marinated chicken to the pan and stir-fry until the chicken is cooked through, about 7-10 minutes.
  4. Pour in water, sugar, and salt. Cook for an additional 5-7 minutes until the sauce thickens and coats the chicken.
  5. Serve hot with steamed rice or noodles.
