Ingredients
- 1 pound chicken thighs, boneless and skinless, cut into bite-sized pieces

- 5 dried bird’s eye chilies, finely chopped
- 2 stalks lemongrass, white part only, finely chopped
- 1 tsp sugar
- 1 tsp salt
- 1/2 cup water
Instructions
- Marinate the chicken pieces in soy sauce and lime juice for 30 minutes.
- Heat 2 Tbsp of oil in a pan over medium heat and sauté garlic, ginger, bird’s eye chilies, and lemongrass until fragrant, about 2-3 minutes.
- Add the marinated chicken to the pan and stir-fry until the chicken is cooked through, about 7-10 minutes.
- Pour in water, sugar, and salt. Cook for an additional 5-7 minutes until the sauce thickens and coats the chicken.
- Serve hot with steamed rice or noodles.
