  • 2 tablespoons cornstarch

Instructions

  1. In a bowl, combine soy sauce, rice vinegar, ketchup, and brown sugar. Stir to mix the sauce ingredients.
  2. In another small bowl, mix cornstarch and water to create a slurry. Set aside.
  3. Heat vegetable oil in a large skillet over medium-high heat.
  4. Add chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.
  5. Remove chicken from the skillet and set aside.
  6. In the same skillet, add red and green bell peppers. Sauté for 3-4 minutes until they start to soften.
  7. Add cubed pineapple to the skillet and stir to combine with the peppers.
  8. Return the cooked chicken to the skillet.
  9. Pour the prepared sauce over the chicken and vegetables, stirring to combine.
  10. Bring the mixture to a simmer, then add the cornstarch slurry.
  11. Continue to cook, stirring, until the sauce thickens, about 2-3 minutes.
