These cupcakes are pretty good but a little denser than other chocolate cake. You can’t taste the avocado once they’re baked. The avocado is really just a substitute for the oil or other fat that is typically in cake recipes. So it’s a good alternative if you’re looking to avoid seed oils or anything like that. I paired them with the Easy Vanilla Buttercream recipe here: http://chopped.com/recipe/easy-vanilla-buttercream/ But I think if I make these again, I’ll probably do chocolate frosting like the picture.
