Ingredients

  • 1 1/2 cups graham cracker crumbs, lower case
  • 1/3 cup sugar
  • 1/2 cup butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup blueberries
  • 1 tbsp lemon zest

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, 1/3 cup sugar, and melted butter until the mixture is uniform. Firmly press this mixture into the bottom of a greased 9×9 inch baking pan to form the crust.
  3. In a large mixing bowl, blend the cream cheese, 1/2 cup sugar, and vanilla extract until smooth. Integrate eggs one at a time, ensuring each is fully incorporated before adding the next.
  4. Gently pour the cream cheese mixture over the prepared crust. Evenly distribute the blueberries and sprinkle the lemon zest across the top of the cream cheese layer.
  5. Bake in the preheated oven for 40-45 minutes, or until the center of the cheesecake is set but slightly wobbly. Remove from the oven and allow to cool at room temperature. Chill in the refrigerator for at least 3 hours to firm up before slicing into bars.
