Miso Ramen with Tofu and Bok Choy

Ingredients

  • 8 oz ramen noodles
  • 4 cups vegetable broth
  • 1/4 cup white miso paste
  • 1 block firm tofu, cubed
  • 4 heads baby bok choy, halved
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp sriracha (optional)
  • 4 stalks green onions, sliced
  • 1 tbsp sesame seeds, for garnish

Instructions

  1. Bring the vegetable broth to a simmer in a large pot.
  2. Stir the miso paste, minced garlic, grated ginger, soy sauce, and sesame oil into the broth until the miso is fully dissolved.
  3. Add the cubed tofu and halved baby bok choy to the pot. Simmer for 10 minutes or until the bok choy is tender.
  4. While the broth simmers, prepare the ramen noodles as per the package instructions. Once cooked, drain and set aside.
  5. Divide the cooked noodles evenly among the serving bowls.
  6. Pour the hot miso broth with tofu and bok choy over the noodles in each bowl.
  7. Garnish with sliced green onions and sesame seeds. If using, drizzle sriracha over the top.
  8. Serve the dish warm.
