Ingredients

  • 2 lbs tomatoes, halved
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 tbsp balsamic vinegar
  • 1 tsp sugar
  • 1 tbsp olive oil
  • 1 sheet puff pastry, thawed
  • 1 tbsp water

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Arrange the tomatoes on a baking sheet and drizzle with olive oil. Sprinkle evenly with salt and black pepper before roasting for 20 minutes until they are tender and start to caramelize.
  3. Utilize a large pot to heat another portion of olive oil over medium heat. Sauté the minced garlic until it becomes aromatic.
  4. Stir in the roasted tomatoes and fresh basil, followed by the addition of vegetable broth, coconut milk, balsamic vinegar, and sugar. Let the mixture simmer gently for 15 minutes, blending the flavors together.
  5. Use an immersion blender or transfer to a blender to purée the soup until it reaches a smooth consistency.
  6. Roll the thawed puff pastry out on a light flour dusting surface and cut into even squares.
  7. Spoon the soup into the center of each pastry square. Moisten the edges with water, then fold the pastry over, pressing to seal the edges, creating a small pouch.
  8. Arrange the filled pastry on a baking sheet and bake at 400°F (200°C) for 15 minutes, or until the pastry is puffed and golden.
  9. Serve the bites while they are warm.
