Ingredients

  • 1 lb pork belly, cut into cubes
  • 1 lb pork offal, diced
  • 1/2 cup vinegar
  • 4 cups pork blood
  • 2 cups water
  • 3 whole green chili peppers
  • 1 tbsp garlic, minced
  • 1 whole onion, chopped
  • 1 tbsp cooking oil

Instructions

  1. Heat the cooking oil in a pot over medium heat and sauté the minced garlic and chopped onion until fragrant and translucent.
  2. Add the pork belly and diced offal, cooking until they are evenly browned.
  3. Pour in the vinegar and allow it to simmer for 5 minutes without stirring to reduce its acidity.
  4. Add water to the pot and bring the mixture to a boil.
  5. Slowly pour the pork blood into the pot while stirring continuously to prevent curdling.
  6. Add the whole green chili peppers and lower the heat to a simmer. Let it cook for 30 minutes until the flavors meld.
