  • 4 cups water

  1. In a large pot, combine pork leg, soy sauce, vinegar, peppercorns, and water. Bring to a boil, then reduce heat and simmer for 45 minutes to infuse flavors.
  2. Carefully remove the pork leg from the pot and allow it to cool at room temperature. Once cooled, refrigerate for at least 6 hours or overnight to enhance crispiness.
  3. Preheat oil in a deep fryer or large pot to 375°F (190°C). Gently lower the pork leg into the hot oil and fry until skin is crispy and golden brown, about 15-20 minutes, ensuring even frying throughout.
  4. Remove the pork leg from the oil and allow it to drain on a wire rack to remove excess oil. Let it rest for a few minutes to settle before slicing into serving pieces.
  5. Serve the crispy pata with a dipping sauce made of soy sauce, vinegar, and chili for added flavor.
