Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 can (14 oz) coconut milk
  • 1 piece ginger, sliced
  • 4 cloves garlic, minced
  • 2 pieces red chili, sliced
  • 1 Tbsp fish sauce
  • 1 Tbsp vegetable oil
  • 2 Tbsp green onions, chopped

Instructions

  1. In a large pan, heat 1 Tbsp of vegetable oil over medium heat.
  2. Add the sliced ginger, minced garlic, and sliced red chili to the pan. Sauté for 2-3 minutes until fragrant.
  3. Pour in the can of coconut milk and bring to a gentle simmer.
  4. Add the peeled and deveined shrimp to the pan and cook for about 4-5 minutes until the shrimp turn pink and opaque.
  5. Season the dish with 1 Tbsp of fish sauce and stir in the chopped green onions.
  6. Serve the Ginataang Hipon hot over a bed of steamed rice.
