Biko is a beloved traditional Filipino dessert that combines glutinous rice, coconut milk, and brown sugar into a sticky, sweet treat. Ingredients

  • 2 cups glutinous rice
  • 2 cups coconut milk
  • 1 cup brown sugar
  • 1 cup coconut cream

Instructions

  1. Rinse the glutinous rice under running water until the water runs clear; this removes excess starch.
  2. In a pot, combine the rinsed rice and coconut milk. Bring to a boil, then reduce the heat to low and cover. Cook for about 30 minutes, or until the rice is tender and sticky, stirring occasionally to prevent sticking.
  3. Stir in the brown sugar and continue to cook on low heat for another 10 minutes, or until the mixture thickens and becomes glossy.
  4. Grease a baking dish with a little coconut oil to prevent sticking, then transfer the cooked rice mixture into the dish, pressing down lightly to flatten the top.
  5. Evenly pour the coconut cream over the flattened rice in the baking dish.
  6. Bake in a preheated oven at 350°F (175°C) for 20 minutes.
  7. Switch the oven setting to broil and broil for about 5 minutes or until the top becomes golden brown, watching closely to prevent burning.
  8. Remove from the oven and allow the biko to cool slightly before cutting into squares for serving.
