Ingredients

  • 1 lb pork belly, sliced thinly
  • 8 cups beef broth
  • 1 Tbsp fish sauce
  • 8 oz round miki noodles
  • 1 cup chicharron, crushed
  • 1 cup green onions, chopped

Instructions

  1. Heat 2 Tbsp of oil in a pot over medium heat and sauté 1 Tbsp of minced garlic until golden brown.
  2. Add the sliced pork belly to the pot and cook until the pieces are browned on all sides, about 5-7 minutes.
  3. Pour in the beef broth and bring the mixture to a rolling boil.
  4. Stir in the fish sauce, reduce the heat to low, and let the soup simmer gently for 30 minutes to allow the flavors to meld.
  5. Add the miki noodles to the pot and cook until they are tender, approximately 5-6 minutes.
  6. Ladle the hot soup into bowls and garnish each serving with crushed chicharron and chopped green onions.
