Ingredients

  • 1 lb pork ribs
  • 10 cups water
  • 1 packet tamarind soup base
  • 1 large onion, quartered
  • 2 medium tomatoes, quartered
  • 4 pieces radish, sliced
  • 1 bunch water spinach, kangkong

Instructions

  1. In a large pot, bring 10 cups of water to a boil.
  2. Add pork ribs to the boiling water and reduce the heat to a simmer. Cook for 30 minutes, skimming off any foam that rises to the surface.
  3. Add the tamarind soup base, quartered onion, and tomatoes to the pot. Continue to simmer for another 30 minutes.
  4. Add sliced radish to the pot and simmer until tender, about 10 minutes.
  5. Stir in water spinach and cook until wilted, about 2 to 3 minutes.
  6. Season the soup with fish sauce or salt according to taste.
