  • 8 oz rice noodles
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp soy sauce
  • 2 tbsp tamarind paste
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1/2 cup bean sprouts
  • 1/2 cup chopped peanuts
  • 1/4 cup chopped cilantro
  • 1 piece lime, cut into wedges

Instructions

  1. Soak the rice noodles in a bowl of hot water for 10 minutes, then drain thoroughly.
  2. In a small bowl, whisk together the soy sauce, tamarind paste, and brown sugar until well combined.
  3. Heat the vegetable oil in a large pan over medium heat. Add the minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
