Ingredients
- 2 pounds Yukon Gold potatoes, peeled and cubed
- 4 cloves garlic, roasted
- 1/2 cup goat cheese, crumbled
- 1/4 cup milk
- 1/4 cup unsalted butter
- 1 teaspoon salt

- 2 tablespoons chives, chopped
Instructions
- Place the cubed potatoes in a large pot and cover with water. Add a pinch of salt and bring to a boil over medium-high heat.
- Reduce heat to a simmer and cook the potatoes for 20-25 minutes, or until they are tender when pierced with a fork.
- While the potatoes are cooking, roast the garlic by wrapping the cloves in aluminum foil and baking them in a preheated oven at 400°F (200°C) for 20 minutes.
- Drain the potatoes and return to the pot. Add the roasted garlic, goat cheese, milk, and butter.
- Mash the potatoes with a potato masher or hand mixer until smooth and creamy.
- Season with salt and black pepper to taste. Stir in the chopped chives.
- Serve the mashed potatoes hot, garnished with additional chives if desired.
