Delight in the exquisite experience of Gluten-Free Chocolate Eclairs, a scrumptious dessert ideal for any gathering. These delicate pastries are filled with a rich chocolate cream and topped with a smooth chocolate glaze, making them a treat for any sweet enthusiast. Even without gluten, these eclairs capture the traditional flavor and texture of the renowned French pastry. With straightforward ingredients and a bit of care, these delightful treats can be made at home, providing a truly enjoyable experience.

Ingredients

  • 1 cup gluten-free flour blend
  • 1/2 cup butter
  • 1 cup water
  • 4 whole eggs
  • 1 cup heavy cream
  • 8 oz dark chocolate, chopped
  • 1 Tbsp vanilla extract
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a saucepan, combine water and butter. Bring to a boil, then add gluten-free flour and stir vigorously until the mixture forms a ball and pulls away from the sides of the pan.
  3. Transfer the dough to a mixing bowl and let it cool slightly for about 5 minutes. Beat in eggs one at a time, ensuring each is fully incorporated before adding the next, until the mixture is smooth and glossy.
  4. Transfer the dough to a piping bag fitted with a large round tip. Pipe 4-inch long eclairs onto the prepared baking sheet, leaving space between each.
  5. Bake the eclairs for approximately 30 minutes or until they are puffed and golden brown. Remove from the oven and let them cool completely on a wire rack.
  6. In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  7. Once the eclairs are cooled, cut them in half lengthwise and fill each with the whipped cream mixture.
  8. Place the chopped dark chocolate in a heatproof bowl over a saucepan of simmering water, stirring until melted. Dip the tops of the filled eclairs into the melted chocolate to glaze them.
  9. Chill the eclairs in the refrigerator for at least 1 hour before serving to allow the chocolate to set.
