This Greek pasta salad is a refreshing combination of tangy feta, juicy cherry tomatoes, and crisp cucumbers.
Ingredients
- 8 oz short pasta, such as penne or fusilli
- 1 cup cherry tomatoes, halved
- 1 cup cucumbers, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup red onion, thinly sliced
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt, to taste
- Black pepper, to taste
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside to cool.
- In a large bowl, combine cherry tomatoes, cucumbers, feta cheese, and red onion.
- In a small bowl, whisk together olive oil, red wine vinegar, dried oregano, salt, and black pepper.
