These guacamole-stuffed cherry tomatoes are a refreshing appetizer with a tangy twist, ideal for parties or light snacks.

Ingredients

  • 1 pint cherry tomatoes
  • 2 ripe avocados
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 small red onion, minced
  • 1 small jalapeño, seeded and minced
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Cut the tops off each cherry tomato and scoop out the seeds gently using a small spoon or melon baller. Set aside.
  2. In a bowl, mash the avocados with a fork until smooth.
  3. Add lime juice, salt, black pepper, red onion, and jalapeño to the mashed avocados. Mix well to combine.
