Ingredients
- 1 cup lentils, rinsed
- 1 cup chickpeas, cooked
- 1 can tomatoes, diced

- 2 stalks celery, chopped
- 2 whole carrots, chopped
- 4 cups vegetable broth
- 1 tsp cumin
- 1 tsp turmeric
- 1/2 tsp cinnamon
- 1/4 cup fresh cilantro, chopped
Instructions
- In a large pot, heat 2 tablespoons of oil over medium heat.
- Add the chopped onion, celery, and carrots. Cook, stirring occasionally, until softened, about 5 minutes.
- Stir in the cumin, turmeric, and cinnamon. Cook for another minute until the spices are fragrant.
- Add the rinsed lentils, cooked chickpeas, diced tomatoes with their juice, and vegetable broth. Bring to a boil, then reduce the heat to low.
- Cover the pot partially and let the soup simmer for about 30 minutes or until the lentils are tender.
- Stir in the chopped fresh cilantro and adjust the seasoning with salt and pepper to taste.
- Serve the soup hot in bowls.
