Ingredients

  • 1 cup lentils, rinsed
  • 1 cup chickpeas, cooked
  • 1 can tomatoes, diced
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 2 whole carrots, chopped
  • 4 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large pot, heat 2 tablespoons of oil over medium heat.
  2. Add the chopped onion, celery, and carrots. Cook, stirring occasionally, until softened, about 5 minutes.
  3. Stir in the cumin, turmeric, and cinnamon. Cook for another minute until the spices are fragrant.
  4. Add the rinsed lentils, cooked chickpeas, diced tomatoes with their juice, and vegetable broth. Bring to a boil, then reduce the heat to low.
  5. Cover the pot partially and let the soup simmer for about 30 minutes or until the lentils are tender.
  6. Stir in the chopped fresh cilantro and adjust the seasoning with salt and pepper to taste.
  7. Serve the soup hot in bowls.
